Chorizo Stuffed Peppers
The way to a man’s heart is through his stomach, right? So I keep working on coming up with different ways to infuse some spice into our homemade dinners. Why not some chorizo?
Stuffed vegetables of any kind are pretty great option to change the look and feel of a meal. Stuffed peppers aren’t something I make often. They’re one of those things that I can’t always get excited about cooking because they can take awhile. So this time around, trying out the AirFryer, and it was great.
These are delicious made fresh for dinner. They also freeze well as a make ahead option.
Ingredients:
– Chorizo (1 lb)
– Onion (1 medium)
– Salsa (1/2 cup)
– Bell Peppers (3 color of choice)
– Cheddar Cheese
Topics of choice: sour cream and tomatillo avocado salsa
Kitchen Items You’ll Need:
– Cutting Board
– Knife
– Frying Pan
– AirFryer
Cooking Instructions:
1. Brown chorizo and drain.
2. Chop onion. Saute until translucent. Add chorizo and salsa to pan and mix together.
4. Slice peppers in half. Clean out inside of peppers. Stuff with chorizo mixture.
5. Cook in AirFryer at 380 for 10 minutes. Top with cheese and cook for 2-3 more minutes.
