Mandarin Pork Chops
Pork is one of those funny foods… other than bacon I don’t particularly care for it one way or the other. Good on occasion, especially in the summer when we’re smoking ribs or pulled pork, but not a staple of our diet. As I was thinking about meals for the week, I was coming up with an abundance of chicken so decided to mix it up.
I enjoy getting creative with ingredients we have around the house and was pleasantly surprised with this one. Mandarin and soy sauce gives the perfect salty n’ sweet goodness, just make sure to smash the mandarins to get the juice out. If you don’t want to peel fresh mandarins, you can always use the canned ones instead.
These pork chops could really be served with your favorite veggies, but roasted broccoli added a nice color contrast and crunch to the meal. This is one that will definitely be showing up on our dinner plates again.
Ingredients:
– Pork Chops (2 8oz chops)
– Olive Oil
– Salt and Pepper
– Soy Sauce (1/2 cup)
– Mandarins (2-4 fresh, peeled and pieces separated)
– Garlic (1 clove, minced)
– Ginger (1 tsp, grated)
Kitchen Items You’ll Need:
– Dish, for marinating
– Garlic Press
– Grater
– AirFryer
Cooking Instructions:
1. To make the sauce, peel and smash mandarins and mix with soy sauce, garlic, and ginger. Set aside.
2. Salt and pepper pork chops and pan fry in 1 TBSP olive oil for 2-3 minutes per side.
3. Add sauce to pan with pork chops and simmer about 10 minutes, spooning sauce onto the pork chops.
Served with Simply Roasted Broccoli, but your favorite vegetable will do!
